Silver Dollars + Plants
Is this a bad combo and doomed to fail? Or are there some plants that are hardy enough to sustain some damage from the silver dollars and still do ok?

Java fern, anubias and java moss. I have tried these with my SD' s with some success. The plants did fine for several months but eventually were consumed. Java fern was the longest lasting.

Pennywort and hornwort both will probably grow fast enough to withstand the damage they get from being nibbled on. I wouldn't count on anything not being eaten at least some so go for the cheap, fast growing plants.

Ooh we're interested in the same fish
My experience with plants and vegetation loving fish is to buying the cheapest plant you can find, stick it in, and see how it goes. You just have to go by experience since not all fish will destroy the same plants. I tend to get java fern first since I can find it pretty cheap and easily. And then just go from there, trying other cheap plants and expecting some damage to come to them.
